Maize grits are finely ground, dried corns that have often had the germ removed beforehand to improve their shelf life. Corn grits are used for polenta, cakes, pastries and bread. Because of the low gluten content, however, it has to be mixed with wheat flour so that the baked goods can rise well.

Corn grits are gluten-free.
