Cooking instructions:

Bring one part millet and two parts lightly salted water to a boil in a saucepan.

Simmer over low heat for about 20 minutes.

Ingredients (4 servings):

100 ml water

100 g millet

100 ml milk

4 pears

4 eggs

4 tbsp honey

50 g ground hazelnuts

1 tsp cinnamon

Juice and zest of half a lemon

Salt to taste
Preparation:
Combine millet, milk, water, cinnamon, and salt in a saucepan and bring to a boil. Simmer over low heat for about 8 minutes. Turn off the heat and let it swell for another 10–15 minutes. Separate the eggs. Mix the yolks with honey, hazelnuts, lemon juice, and zest. Add the pitted and chopped pears along with the millet. Beat the egg whites until stiff and gently fold them into the millet mixture. Pour everything into a greased baking dish and bake in a preheated oven at 175°C for about 30 minutes until golden brown on top.
